As a biochemist and expert in metabolism and obesity, IPEK scientist Alexander Bartelt was sollicited to participate to the german science show Galileo in a short documentary featuring Zero-Calorie Foods.

He invites us in his lab and demonstrates how it is possible to manufacture food which tastes sweet when it is not, or shows us the properties of cellulose.

 

Do these engineered foods taste up to the original? This is the question that a group of blindfolded tasters were prepared to answer.
